Today, the center’s eight full-time staff members, 100 part-time student workers and hundreds of volunteers wield their multimillion-dollar budget — raised almost entirely from student fees — to tackle everything from recycling and composting to environmental justice issues and the creation of a campus-wide carbon neutrality plan.

Denver Zoo Named Sustainability Champion

The Denver Zoo, home to 4,000 animals, was recently recognized by the Colorado Department of Public Health and Environment and the Connected Organizations for a Responsible Economy (CORE) as a Sustainability Champion for its efforts to reduce waste and greenhouse emissions. In 2009 zoo employees logged 156,000 commuter miles using alternative transportation such as public bus, light rail, walking, biking, and carpooling. The zoo diverted about 680 tons of compostable material from the landfill between 2008 and 2009, and recycled 2,600 pounds of electronic waste, 37 tons of commingled recycling, 54 tons of cardboard and 6.25 tons of metal. “We’re a conservation organization,” said Denver Zoo Sustainability Coordinator Jennifer Hale. “Being sustainable just rolls into that mission.”

Colterra Restaurant in Niwot
If you live in Colorado and haven’t been to Colterra in Niwot or Salt in Boulder, go! Go soon! Go often! These restaurants embody the farm-to-table movement that is sweeping the country. Organic, locally grown seasonal produce is used in all of their French/Italian dishes. Colterra even boasts their own garden and will host a few organic gardening seminars this spring. Eating organically in Colorado has never tasted so good!
